I eat a lot of Greek yogurt (just ask my husband) It's filling, full of protein and has a thick, creamy texture that feels somewhat decadent. I'm always creating yummy ways to incorporate yogurt, and my Yogurt & Oatmeal Parfait is one of my favorites. People who train with me often see me eating it and ask how to make it.
It's so simple that I can't really call it a "recipe" It's more of an assembly. Which is good for me.

Makes 1 Parfait
Ingredients
1/2 Cup Cooked Oatmeal
Cinnamon to taste
1/2 Cup 2% Greek Yogurt
1 TBS of Favorite Nut Butter
1-2 TBS of Favorite Seeds (I always use 1 tsp of chia seeds and also add either toasted sesame, sunflower, pumpkin or flax)
So first you have to cook your oatmeal.
I make a bunch of oatmeal at once so I can make these parfaits quickly. I bring 1 cup of oatmeal and 2 1/4 cups of water to a boil, reduce heat and then simmer for 5 minutes. Let the oatmeal cool slightl
